Chocolate Fudge Cupcakes

Ok so originally this recipe was for a chocolate fudge cake, however I always feel extremely guilty making a whole cake just because I fancy a piece. So I halved the recipe and made cupcakes instead :) that way I can have just one and then I can pass around the rest to spread the joy (and calories). Hello gardener, would you like a cupcake with your coffee? Sometimes recipes don't adjust easily from cake to cupcake but this one came out really well. 

I have to say, this recipe isn't mine. Well the cake mix recipe isn't but the frosting recipe is all mine :). I don't usually like chocolate cake as I find it really dry, but I was once again hunting for recipes online and came across this one on the BBC website. The cake is lovely and moist and although the cupcakes are slightly dryer they are still better than all other chocolate cupcakes I have tried. Now I always give credit for recipes that I find and would love to give you the address of the site I found it on, however I have looked for the recipe online for the last half hour and can't find it anywhere. So you will have to make do with knowing that it was on the BBC website when I found it a year ago. 


Ok so what you need for the cake mix is:
  •          50g spreadable butter;
  •          125ml milk (I used semi-skimmed);
  •          1/2 tbsp red wine vinegar;
  •          50g plain chocolate, melted;
  •          8g cocoa powder;
  •          150g self-raising flour;
  •          1/2 tsp bicarbonate of soda;
  •          115g golden caster sugar; and
  •          1 egg.

And for the frosting you will need:
  • 3 tbsp of Nutella;
  • 100ml Double Cream; and
  • 250g Icing Sugar.

What you need to do:

1. Preheat the oven to 170C (fan oven). Line a muffin tin with muffin cases (I like super size cupcakes). The mix should make about 12 cakes. 

2. Add all of the cake mix ingredients into a large mixing bowl and mix with an electric whisk until smooth.

3. Divide the cake mix into the muffin cases. Each one should be about 1/3 full.

4. Pop into the oven and bake for 20-22 minutes until a knife stuck into the cakes comes out clean. 

5. While the cakes are in the oven, make the frosting. For the frosting the nutella needs to be melted you can stick the jar into the microwave for a minute to melt it. Just make sure the lid is off as it has metal foil in it. 

6. To make the frosting, add all of the frosting ingredients into a bowl and combine with a spoon before whisking with the electric whisker (otherwise the icing sugar explodes into a sugar cloud).

7. When the cupcakes are done leave them to cool completely on a cooling rack before topping with the frosting. 

8. Enjoy :)









To make a cake instead, double the recipe for the cake mix and triple the recipe for the frosting. Use a 20cm round, deep cake tin lined with baking paper to cook the cake in and bake for 1 hour, until firm in the centre. When the cake has cooled, halve the cake through the middle. Spread a quarter of the frosting in the middle and the rest over the top and sides.
